What each ingredient does

Gelatine
Sets the coffee liquid into a firm, sliceable gel when it cools.
Coarsely ground coffee
Provides the coffee flavor and aroma that the gelatin carries.
Sugar
Adds sweetness to balance the bitterness of the coffee.

The step that matters

Heat until almost boiling, then mix well. Gelatine must fully dissolve before the mixture is poured; if it is not stirred thoroughly, it can set unevenly or in streaks. Keep the heat below a full boil so the gelatine's setting strength is not weakened.
