Cocoa-nut Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the coconut

  1. Remove the thin brown skin from the cocoa-nut with a knife, wash, and dry the pieces.

  2. Grate ¼ pound of cocoa-nut very finely into a bowl.

Make the filling

  1. Cream the butter and sugar together, then gradually add the wine and rose-water.

  2. Beat the egg whites until stiff peaks form, then fold them into the butter and sugar mixture.

  3. Gradually stir in the grated cocoa-nut while mixing well.

Bake and serve

  1. Line a soup plate with puff pastry, pour in the mixture, and bake in a moderate oven (350°F / 175°C) for about 30 minutes.

  2. Once cool, sprinkle grated loaf sugar over the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they lighten the filling and help it rise and set in the oven.
Butter
Creamed with sugar, it adds richness and a tender texture to the filling.
Grated cocoa-nut
Adds bulk, flavour and a moist, chewy texture to the pudding.
Powdered white sugar
Sweetens the filling and, creamed with butter, helps give it a light body.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that gives the pudding its lift. Folding gently, rather than stirring, keeps that air from collapsing, so the filling rises and sets lighter.

Swap the cocoa
