Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Main vegetable that gives the pickle its body, texture and deep color.
Vinegar
Provides the sharp acidity that defines the pickle and helps preserve it.
Allspice
Adds warm, aromatic flavor to the pickling liquid.
Whole pepper
Contributes pungent aroma and spice to the pickling liquid.

The step that matters

Wash the beets without pricking the skin. Piercing the skin lets color and juices bleed out during boiling, leaving the beets pale and watery and reducing their flavor.

Swap the allspice

How well each one fits the dish's main ingredients (pepper, vinegar, sugar, mustard):

  1. Tarragonfits about as well
  2. Allspicethe original
  3. Dillfits about as well
  4. Capersfits less well

Fit is the average pairing score against pepper, vinegar, sugar, mustard. Candidates are from the same food group and used in at least 100 recipes.
