Ingredients

Directions

The book says “a slack oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel and core the apples.

  2. Place apples in a saucepan with water and boil until soft.

  3. Mash the apples until thick.

Make the mixture

  1. Stir in sugar, lemon juice, and beaten egg yolks, then mix all ingredients well.

  2. Pour mixture into a baking dish and bake at 350°F (175°C).

  3. When nearly done, sprinkle with fine sugar.

  4. Optionally, bake in puff pastry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and pectin-rich body that becomes a soft, spoonable pudding.
Egg yolks
Set during baking to give the pudding a rich, custard-like structure.
Loaf sugar
Sweetens the pudding and helps create a soft, tender texture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Baking the mixture. Egg yolks set with heat, so bake only until the pudding is just firm; overbaking can make the yolks curdle and turn grainy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
