Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: ethanol (alcoholic, ethereal).

  2. Sugar + lemontop 18% of all pairs

    Shared aroma: ethanol (alcoholic, ethereal).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

What each ingredient does

Strawberries
Provide the main flavor and fruit juice that gives the jelly its character.
Sugar
Adds sweetness and body to the jelly.
Isinglass
Gelling agent that sets the liquid into a firm jelly when chilled.
Lemon juice
Adds acidity that brightens the strawberry flavor.

The step that matters

Adding the isinglass to the sugar mixture. Isinglass is a gelling agent that must be fully dissolved and evenly mixed in before the strawberries are added. Uneven mixing leaves weak or cloudy patches, and setting depends on the gel network forming throughout the liquid as it cools.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
