Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavour and most of the liquid for the jelly.
Sugar
Adds sweetness and helps give the set jelly a smooth, soft body.
Lemon juice
Adds acidity that balances the sweetness and sharpens the pineapple flavour.
Isinglass
Gelling agent that sets the liquid into a firm, clear jelly as it cools.

The step that matters

Adding the isinglass after cooling slightly. Isinglass must be stirred in while the liquid is still warm and fluid so it distributes evenly. If the mixture cools too far, the gelling agent can begin to set unevenly before it is fully mixed in.
