Salmon Steaks

Ingredients

Directions

  1. Split the salmon and remove the bone carefully.

  2. Cut the salmon into fillets or steaks, about 1 inch thick.

  3. Dry the fillets lightly with a cloth and dredge them with flour.

  4. Prepare a clean grill and rub the bars with chalk to prevent sticking.

  5. Broil the salmon over bright coals, turning with steak tongs until thoroughly cooked.

  6. Serve hot, wrapped in a heated napkin, with anchovy or lobster sauce.

  7. Alternatively, butter pieces of white paper, wrap salmon in them, and secure with string or pins.

  8. Broil the wrapped salmon over a moderate fire until done, then remove the paper.

  9. Serve hot, garnished with fried parsley, with prawn or lobster sauce.
