Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Beat the eggs until thick and smooth.

  2. Gradually add the powdered sugar while continuing to beat.

  3. Stir in the lemon zest and juice, and the rose water.

  4. Beat the mixture vigorously.

  5. Gently fold in the potato flour or wheat flour.

Prepare the cases

  1. Prepare small square or oblong paper cases with edges turned up.

  2. Butter the cases or sift sugar inside them.

Fill and bake

  1. Fill each case with the mixture, leaving some space at the top.

  2. Grate loaf sugar over the top of each filled case.

  3. Bake in a hot oven at 400°F (200°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped to trap air, giving the biscuit its light, airy structure.
Powdered sugar
Sweetens the batter and dissolves readily into the beaten eggs for a smooth texture.
Potato flour
Provides a light starch structure that sets the sponge while keeping it tender.
Lemon zest and juice
Adds aroma and bright acidity that balances the sweetness.
Rose water
Contributes a floral aroma to the batter.

The step that matters

Fold in the flour gently. Folding keeps the air beaten into the eggs. Stirring or overmixing knocks out that air, so the sponge bakes up dense instead of light.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, rose, butter):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, rose, butter. Candidates are from the same food group and used in at least 100 recipes.
