Peach Sweetmeats

Ingredients

Directions

Make the syrup

  1. Dissolve the brown sugar in water, clarifying it with the egg.

  2. Boil the peaches and sugar mixture, skimming off the egg that rises to the top.

  3. Continue boiling until the mixture thickens to a jelly consistency.

Prepare the peaches

  1. For whole peaches, do not peel them; instead, boil them in water briefly.

  2. Remove the peaches from the boiling water and wipe them dry.

What each ingredient does

Peaches
Provide the main fruit flavour and the body of the sweetmeat.
Brown sugar
Adds sweetness and, as the syrup concentrates, helps it set to a jelly.
Egg
Clarifies the syrup: as it cooks it gathers impurities that can be skimmed off the surface.

The step that matters

Boil until the mixture thickens to a jelly consistency. As water evaporates, the sugar becomes more concentrated and the syrup sets. Stopping too early leaves it runny, while boiling too long makes it stiff and hard once cooled.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Peachthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
