The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavor and fruit juice that gives the jelly its taste.
Clarified isinglass
Gelatin-like setting agent that firms the liquid into a sliceable jelly.
Sugar
Adds sweetness and body, and helps the jelly hold a clear, smooth texture.
Lemon juice
Adds acidity that brightens the strawberry flavor and balances the sweetness.

The step that matters

Adding the strawberries gently. Stirring the strawberries in too vigorously can break them up and cloud the clear jelly. Gentle folding keeps the mixture clear and the fruit intact as it sets.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
