Pine-apple Jelly

Ingredients

1 ripe pineapple
juice of 2 lemons
1 ounce clarified isinglass
boiling syrup

Directions

Cut the pineapple into small pieces and strain the juice through a fine sieve.
Add the pineapple juice to boiling syrup and let it boil briefly.
When nearly cold, strain the mixture through a silk sieve.
Stir in the lemon juice and clarified isinglass.
Proceed as you would for strawberry jelly.
