Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leeks
Form the main body of the soup and give it their mild, sweet onion flavor.
Butter
Softens the leeks in fat and carries flavor into the soup.
Flour
Thickens the milk and stock, giving the soup a smooth, body-rich texture.
Egg yolk
Stirred in at the end to enrich and add richness and body to the soup.
Hot milk
Adds creaminess and mellows the soup's flavor.

The step that matters

Stir in the egg yolk after cooking. Egg yolk thickens through gentle heat, and if it boils it can curdle and turn grainy. Stirring it in off the boil, or with the heat low, keeps the soup smooth and silky.
