Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haddock
Forms the main body of the dish, cooked gently in simmering water until flaky.
Coarse sea salt
Draws out moisture and seasons the flesh during the resting period before cooking.

The step that matters

Simmering the fish. Water that boils hard rather than simmering can break up and toughen the delicate flesh. Keeping the water just below a boil cooks the fish evenly and keeps it moist.

Swap the parsnip

How well each one fits the dish's main ingredients (haddock, parsley, egg, sauce):

  1. Shallotfits better
  2. Chivefits better
  3. Mustardfits better
  4. Parsnipthe original

Fit is the average pairing score against haddock, parsley, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
