Stuffed Potatoes

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Bake the large potatoes until fully cooked.

  2. Cut off a slice lengthwise and scoop out most of the interior.

  3. Mash the removed potato with egg sauce, salt, and pepper.

  4. Pipe the edges of the potato skins with the mashed potato.

  5. Bake the stuffed potatoes at 400°F (200°C) for 10 to 15 minutes.
