Baked Eggs in Cases

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Butter the inside of china or paper ramekin cases.

  3. Finely chop a little parsley and a small piece of onion.

  4. Mix the parsley and onion with fine breadcrumbs.

  5. Sprinkle some of the mixture in the cases.

  6. Place the cases on a hot baking sheet.

  7. Break an egg into each case and cover with the remaining mixture.

  8. Bake until set but not hard, then serve immediately.
