Directions

Prepare

  1. Prepare a saucepan with boiling salted water, slightly acidulated with vinegar.

Poach

  1. Break the eggs into the boiling water, no more than six at a time.

  2. Let the water simmer; the eggs are done when the white envelops the yolk, about three minutes.

  3. Remove the eggs with a slotted spoon, dip them in cold water, trim the whites, and keep in warm water until serving.

Shared aroma: acetic acid (sour, vinegar).

Egg and vinegar barely smell alike, yet cooks put them together in 12,922 recipes: they work on texture and structure more than aroma.

What each ingredient does

Fresh eggs
Provide the protein that sets into a tender white around the liquid yolk.
Vinegar
Slightly acidifies the water, helping the egg whites coagulate more neatly and hold their shape.

The step that matters

Letting the water simmer gently while the eggs cook. Boiling vigorously tears the delicate whites apart before they set. A gentle simmer lets the proteins coagulate slowly around the yolk, giving a compact, intact egg.
