Potato Paste

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato

  1. Bake the potatoes in their skins until you have 2 pounds of potato, then mash smoothly or pass through a sieve.

Make the dough

  1. Rub the lard and dripping lightly into the flour.

  2. Add the mashed potato, baking powder, and salt, then stir in the eggs and enough milk to form a smooth paste.

  3. Roll out the mixture to about 1 inch thick, cut into rounds or squares, and place in a greased tin.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C), turning 2 or 3 times until both sides are evenly browned.

  2. Split, butter liberally, and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Floury potatoes
Provide starch and body, giving the paste a soft, tender crumb when mashed smooth.
Flour
Forms the main structure that holds the paste together once baked.
Lard
Rubbed into the flour to add fat, tenderness and a short texture.
Dripping
Adds fat and savory flavor, helping the surface brown during baking.
Eggs
Bind the paste and add richness and structure to the baked cakes.
Baking powder
Releases gas during baking, lifting the paste so it rises and stays light.

The step that matters

Turning during baking. Turning the cakes two or three times exposes each side to the oven's heat, so both brown evenly instead of one side scorching or staying pale.

Swap the potato

How well each one fits the dish's main ingredients (flour, egg, milk):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
