Why it works: Lemon and almond match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 5,655 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Lemon Tartlets

10 or 12 patty pans
Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Thickly peel the lemons and boil them in 2 or 3 waters until tender.

  2. Pound or rub the lemons through a fine sieve.

  3. Return the lemon puree to a saucepan, add the sugar, almonds, and lemon juice, and boil until a thick syrup forms.

Bake

  1. Line 10 or 12 patty pans with the short pastry.

  2. Fill the lined pans with the lemon mixture and bake for about 20 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the bulk of the puree and the sharp, aromatic flavour of the filling.
Loaf sugar
Sweetens the filling and, boiled down, thickens it into a syrup.
Blanched almonds
Add body and a nutty richness that helps give the filling its texture.

The step that matters

Boiling the lemon mixture to a thick syrup. The filling must be reduced enough to set firm once baked. Too little boiling leaves it runny and it may soak the pastry, while overcooking can make it stiff and sticky.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, almond):
