Bread Omelet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggs

  1. Beat the eggs separately.

  2. In a bowl, combine the yolks with milk, salt, pepper, and bread crumbs.

  3. Gently fold in the beaten egg whites.

Cook

  1. Heat the butter in a smooth frying pan until hot.

  2. Pour the mixture into the pan and cook over medium heat, shaking occasionally to prevent sticking.

  3. Transfer the frying pan to a 350°F (175°C) oven for a moment to set the middle of the omelet.

Serve

  1. When done, flip the omelet onto a warm platter with the browned side up, or fold it in half and place it in the center of the platter.

  2. Serve immediately to prevent it from falling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift and yolks add richness and set structure as the omelet cooks.
Bread crumbs
Absorb liquid and add body, keeping the omelet tender and moist.
Milk
Adds moisture and softness, diluting the egg proteins so the omelet stays tender.
Butter
Fat for the pan that adds flavor and browning on the surface.

The step that matters

Folding in the egg whites. Whites hold air only if beaten and folded gently; overmixing deflates them, leaving a dense, flat omelet.
