Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Provides the bulk of the soup and its body when pureed through a sieve.
Butter
Carries the aromatics and adds richness and a rounded flavour to the soup.
Flour
Thickens the stock so the soup becomes smooth and creamy.
Milk
Adds creaminess and softens the flavour of the soup.

The step that matters

Add flour and stir into the hot stock or water. Flour clumps if it meets liquid unevenly. Stirring it into hot liquid, and keeping it moving, disperses the starch so it thickens smoothly instead of forming lumps.

Swap the onion

How well each one fits the dish's main ingredients (cauliflower, flour, butter, milk, celery, pepper):

  1. Turnipfits better
  2. Leekfits better
  3. Asparagusfits better
