What each ingredient does

Codfish
Provides the main flavor and the flaky body of the puff.
Mashed potatoes
Add bulk and softness, giving the mixture a light, tender texture.
Eggs
Bind the mixture and help it set and rise in the oven.
Sweet milk
Adds moisture and keeps the mixture soft while it bakes.
Butter
Adds richness and fat, which contributes flavor and a tender crumb.

The step that matters

Soaking the codfish. If the codfish is salt cod, soaking draws out excess salt and softens it. A soak that is too short leaves the finished puff overly salty, and the dry fish will not blend evenly into the mixture.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, pepper, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
