What each ingredient does

Rice
Forms the bulk of the dish; its starch swells and softens as it cooks in water.
Boiling water
Cooks the rice by hydrating its starch so the grains become tender.
Salt
Seasons the cooking water so the rice itself is flavored throughout.

The step that matters

Drain and dry the rice carefully. Excess surface water left on cooked rice makes it soggy and clumped. Drying lets the grains stay separate and keeps the texture light.
