Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg yolks and add them to the milk.

  3. Stir in the sugar, bread crumbs, and vanilla.

  4. Pour the mixture into a baking dish and bake until set.

Top and brown

  1. Once cooled, spread a layer of jelly over the pudding.

  2. Beat the egg whites until stiff, then gradually add the granulated sugar and a pinch of baking powder.

  3. Spread the meringue over the jelly and brown it in the oven for 1 minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and add richness and structure to the pudding.
Bread crumbs
Soak up the milk and egg mixture to give the pudding its body.
Milk
Provides the liquid that cooks into a soft, custard-like texture.
Sugar
Adds sweetness and helps the meringue foam hold and brown.

The step that matters

Browning the meringue. Meringue browns quickly and can scorch, so it needs close attention. Beating egg whites until stiff with sugar creates a foam that holds its shape and colours evenly under heat.
