Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chill the egg whites and add salt.

  2. Beat the egg whites with a whisk until light but not stiff.

  3. While beating, gradually add cream of tartar and sugar.

Mix and bake

  1. Add the flavoring and gently fold in the flour with as few strokes as possible.

  2. Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes.

What each ingredient does

Egg whites
Trapped air in the whipped foam gives the cake its light, airy structure.
Pastry flour
Low-protein flour sets the delicate crumb once the foam is baked.
Sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
Cream of tartar
Acidifies the egg whites, making the foam more stable while whipping.

The step that matters

Folding in the flour. Overmixing knocks air out of the whipped egg white foam, so the flour should be folded in gently with as few strokes as possible to keep the cake light.
