What each ingredient does

Giblets
Provide the main meat and rich flavour of the soup as they simmer.
Butter and flour
Brown together to form a roux that thickens the soup and adds nutty flavour.
Stock
Adds savoury depth and liquid body to the soup.
Lemon juice
Adds acidity that brightens the finished soup.

The step that matters

Brown the butter and flour before adding the stock. Cooking flour in fat drives off raw starch taste and lets the roux thicken evenly. Stirring in the stock until smooth prevents lumps, since flour clumps when added directly to liquid.

Flavor stand-ins for the onion

  2. Parsnipbetter flavor fit
  3. Shallotbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against clove, celery, parsley, thyme, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
