Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare extra puff pastry for pies.

  2. Roll out a portion into a sheet and fit it over an upturned oval mold.

  3. Cut a second sheet to cover the top of the mold when reversed, making several slashes in the center.

  4. Use trimmings to create a rose and several leaves or any desired shapes.

  5. Place the shapes on a flat pan and chill all thoroughly.

  6. Bake in a 400°F (200°C) oven until done.

  7. Carefully remove the mold from the pastry shell.

  8. Fill the shell with diced sweetbreads mixed with a thick cream sauce.
