Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut a piece from the stem end of each tomato.

  2. Scoop out the centers with a teaspoon.

  3. Mix the left-overs with salt, pepper, onion juice or parsley, and melted butter.

  4. Stuff the tomatoes with the mixture.

  5. Place the stuffed tomatoes in a baking dish or baking cups.

  6. Bake in a hot oven at 400°F (200°C) until heated through.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
