Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Soak the codfish in plenty of water overnight.

  2. In the morning, simmer the codfish until tender.

  3. Remove all bones and chop the fish finely.

Assemble and bake

  1. In a bowl, combine the chopped fish, mashed potatoes, thick cream, butter, and pepper. Mix well and transfer to a baking dish.

  2. Bake in a 400°F (200°C) oven until browned nicely.

What each ingredient does

Codfish
Forms the main body of the pie and provides its flavour.
Mashed potatoes
Add bulk and a soft, starchy texture that holds the filling together.
Thick cream
Adds moisture and richness, keeping the filling tender as it bakes.
Butter
Adds fat for richness and helps the top brown in the oven.
