What each ingredient does

Calf's liver
Is the main meat that becomes tender during slow simmering.
Bacon or ham
Larding adds fat that keeps the lean liver moist and flavorful.
Bacon
Renders fat and salty flavor into the cooking liquid, enriching the gravy.
Onion
Releases sweetness and aroma into the simmering liquid as it cooks.

The step that matters

Simmer slowly for 2 hours. Gentle, low-heat simmering lets connective tissue soften and keeps the liver from toughening. A rapid boil would make the liver tough and dry, and the gravy cloudy.

Swap the onion

How well each one fits the dish's main ingredients (liver, ham, pepper, marjoram):

  1. Carrotfits better
  2. Mustardfits better
  3. Capsicumfits better
