What each ingredient does

Sweetbreads
The main ingredient; the tender texture is the focus of the dish.
Salt pork
Drawn through the sweetbreads to add fat and savory flavor as they cook.
Bread crumbs
Form a crisp, golden coating when the sweetbreads are fried.
Milk
Thickened with flour to make a simple gravy for serving.
Flour
Thickens the milk into a gravy in the frying pan.

The step that matters

Boil until thoroughly cooked. Sweetbreads must be fully cooked through before frying so the interior sets and is safe to eat. Frying only browns the outside, so the boiling time decides whether the centre is done.

Swap the peas

How well each one fits the dish's main ingredients (pork, pepper, bread, milk, flour, nutmeg, parsley):

  1. Chestnutfits better
  2. Chickpeafits better
  3. Lentilsfits better
