What each ingredient does

Rice
Its starch absorbs water and swells, setting the final texture of each grain.

The step that matters

Boil until each grain is separate. Rice cooked in plenty of boiling water keeps its grains apart, because surface starch washes away. Cooking too long past the point where grains separate turns the rice soft and sticky.
