Coffee Cake

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a bowl, mix melted butter, sweet milk, sugar, yeast, and eggs until well combined.

  2. Mix until the batter is as stiff as pound cake and let it rise overnight.

  3. In the morning, add salt and stir well.

  4. Pour the batter into a well-greased dripping pan and let it rise again.

  5. In the same bowl, combine flour and sugar for the topping and rub together.

  6. Once the cake is light, brush the top with melted butter and sprinkle with sugar crumbs, almonds, and cinnamon if desired.

  7. Bake in a hot oven at 400°F (200°C) until golden brown.

  8. Serve warm with coffee for breakfast.
