Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, melted lard, salt, and baking powder.

  3. Add sweet milk or water to form a dough, then roll it thin.

Assemble the cobbler

  1. Line a pudding dish with the rolled dough.

  2. Mix 3 tablespoons of flour and 2 tablespoons of sugar, then sprinkle over the crust.

  3. Add sliced peaches and sprinkle 1 cup of sugar on top.

  4. Wet the edges of the crust with a mixture of flour and water.

  5. Cover with the upper crust, pressing the edges together.

  6. Cut two incisions in the top crust to allow steam to escape.

Bake

  1. Bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure and thickens the dusting that sits under the peaches.
Lard
Adds fat that makes the crust tender and flaky.
Baking powder
Releases gas during baking so the crust rises and lightens.
Sliced peaches
Provide the main fruit filling, releasing juices that moisten the crust as it bakes.
Sugar
Sweetens the peaches and browns the crust surface.

The step that matters

Cut two incisions in the top crust. Vents let steam from the juicy peach filling escape, so the top crust does not trap pressure and turn soggy or split unevenly.

Swap the peach

How well each one fits the dish's main ingredients (flour, milk, sugar):

  2. Raisinfits better
  3. Figfits better
