Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add 2 eggs and the juice and grated rind of the lemon; mix well.

  4. Sift the baking powder with the flour and combine with the wet ingredients.

Shape and bake

  1. Mold the dough lightly and cut into cookie shapes.

  2. Beat the remaining egg white until frothy and brush it on top of the cookies.

  3. Sprinkle granulated sugar on top and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to add fat and tenderness to the cookie.
Flour
Forms the structure that holds the cookie shape as it bakes.
Eggs
Bind the dough and add richness and structure.
Baking powder
Releases gas in the dough so the cookies rise and turn light.
Granulated sugar
Sweetens the cookies and helps the sugared top brown as it bakes.

The step that matters

Sifting the baking powder with the flour. Sifting spreads the baking powder evenly so every cookie rises at the same rate instead of leaving pockets of leavening that cause uneven texture.
