Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Provides the gel structure that sets the dessert as it cools.
Egg whites
Whipped whites add a light, airy texture and lighten the color as it sets.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavor.

The step that matters

Stirring while the mixture thickens. Stirring as it begins to set keeps the gelatin evenly distributed and prevents firm layers from forming. Continued stirring also incorporates air and helps the mixture turn lighter in color as it sets.
