What each ingredient does

Peaches
Provide the main fruit flavour and body once cooked down to a thick marmalade.
Sugar
Sweetens the fruit and helps it reduce into a thick, spreadable marmalade.
Gelatine
Sets the mixture so it holds its shape when moulded.
Heavy cream
Adds richness and a creamy texture to the set dessert.

The step that matters

Fold in the whipped cream once the mixture begins to set. If the mixture is too liquid, the whipped cream deflates and the set is lost; if it has set too firmly, the cream will not blend in evenly and lumps may form. Folding at the first signs of setting keeps the dessert airy and smooth.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
