Baked Hamburg Steak

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. In a bowl, combine the chopped meat, soaked bread, minced onion, salt, pepper, ginger, and 2 eggs.

  2. Mix well and shape into a square.

  3. Place the 4 hard-boiled eggs end to end across the middle of the meat and roll the meat around them.

  4. Place the roll in a baking pan.

Bake and serve

  1. In a separate bowl, mix tomatoes, onions, butter, and a little water to make a sauce.

  2. Pour the sauce over the meat roll and bake at 350°F (175°C), basting frequently.

  3. Slice the roll crosswise to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw fresh meat
Forms the main body of the roll and sets firm when baked.
Bread soaked in milk
Adds moisture and softness so the meat stays tender rather than dense.
Eggs
Bind the mixture together and help the roll hold its shape.
Hard-boiled eggs
Form a sliced centre that shows as a visible filling when the roll is cut.
Butter
Adds fat and richness to the sauce and encourages browning in the oven.

The step that matters

Rolling the meat around the hard-boiled eggs. If the meat is not packed evenly and firmly around the eggs, gaps can form and the roll may fall apart or bake unevenly, and it may crack when sliced.

Swap the ginger

How well each one fits the dish's main ingredients (meat, bread, milk, onion, pepper, egg, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Gingerthe original

Fit is the average pairing score against meat, bread, milk, onion, pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
