Cabne Con Chili

Ingredients

Directions

  1. Clean the chile peppers thoroughly, removing seeds and stems.

  2. Parboil the peppers in salted water until soft.

  3. Grind the peppers using a grinding machine or mortar.

  4. Strain the ground peppers through a fine sieve, adding enough broth from boiled meat to create a thick gravy.

  5. In a pan, brown 1 tablespoon of flour in 4 tablespoons of lard.

  6. Add the chili gravy to the browned flour and cook until thick.

  7. Cut the meat into small pieces and boil in water with a little salt and mashed garlic for flavor.

  8. Strain the meat and mix it with the chili gravy, cooking for a few minutes.

  9. Optionally, add a little Spanish sage (oregano) to the chili while grinding for extra flavor.
