Tapioca Cream

Ingredients

Directions

Prepare the tapioca

  1. Soak the tapioca in enough cold water to cover for 1 hour, then drain.

  2. Add the soaked tapioca to the scalded milk and cook in a double boiler until the tapioca is transparent.

Make the custard

  1. In a separate bowl, mix sugar and salt with the egg yolks and beat slightly.

  2. Slowly pour the milk and tapioca mixture into the egg yolks while stirring constantly.

  3. Return the mixture to the heat and cook until it thickens, stirring constantly.

Finish and serve

  1. Remove from heat and fold in the well-beaten egg whites before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as its starch swells and turns the pudding translucent when cooked.
Eggs
Egg yolks thicken the custard, and whites folded in at the end add lightness.
Milk
Forms the liquid base that the tapioca swells in and the custard sets from.
Sugar
Adds sweetness and balances the flavour of the pudding.

The step that matters

Adding the milk mixture to the egg yolks. Pouring hot liquid into yolks too quickly can scramble them. Pouring slowly while stirring constantly tempers the eggs so the custard thickens smoothly.
