A Two-pound or One-seer Plum Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, mix the sugar and butter until well combined.

  3. Add the yolks of the eggs one at a time, mixing continuously.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gradually add the finely-pounded spices and caraway seeds to the butter mixture.

Make the batter

  1. Dredge in the flour and soojee a little at a time, mixing well.

  2. Fold in the currants, raisins, preserved fruits, and almonds.

  3. Pour in the brandy and mix until fully incorporated.

Bake

  1. Transfer the mixture to a greased cake pan and bake for about 1 hour or until a skewer comes out clean.

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites lighten its structure.
Butter
Creamed with sugar, it traps air and gives the cake a tender, rich crumb.
Sugar
Creams with butter and adds sweetness and browning to the crust.
Flour
Forms the main structure of the cake as it sets in the oven.
Soojee (semolina)
Adds a slightly firm, granular texture to the crumb.
Raisins
Add concentrated sweetness and moisture to the cake.

The step that matters

Folding in the egg whites. The whites were beaten to stiff peaks but the steps do not say when to add them, so the cook must fold them gently to keep the air. Deflating the foam makes the cake dense.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, raisin, almond, ginger, orange, lemon):

  1. Figfits better
  2. Limefits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against butter, sugar, raisin, almond, ginger, orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
