Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberry jelly or jam
Provides the raspberry flavor and sweetness, and its sugars help keep the ice cream soft.
Pounded loaf sugar
Adds sweetness and lowers the freezing point, so the mixture stays softer when frozen.
Lemon juice
Adds acidity that brightens the raspberry flavor and balances the sweetness.
Ice
Chills the pot so the mixture freezes while it is turned.

The step that matters

Stirring the frozen cream to the center. Ice crystals form first on the cold sides of the pot. Scraping them back into the middle and turning evenly keeps the texture smooth instead of icy and grainy.
