What each ingredient does

Eggs
Provide the protein that sets firm in the whites and yolks when heated.
Water
Conducts heat evenly around the eggs during cooking and holds them warm when serving.

The step that matters

Once the water resumes boiling, set a timer for 10 minutes.. Timing matters: the proteins in the yolk set firm at about this point, and cooking longer causes a grey-green ring and rubbery whites. Cooling promptly in cold water stops the cooking and eases peeling.
