Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the pastry and cut into rounds.

Fill and cover

  1. Line patty pans with the pastry and fill each with a teaspoon of mincemeat.

  2. Wet the edges and cover with another round of pastry.

  3. Make a hole in the center and decorate the edges.

Bake

  1. Bake in a very hot oven at 400°F (200°C) for twenty minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flaky or puff pastry
Forms the crisp, flaky shell that holds the filling.
Suet
Adds richness and fat that keeps the filling moist and tender.
Sugar
Adds sweetness and helps the filling brown and caramelise in the oven.
Apples
Add moisture and tartness that balance the sweetness of the filling.

The step that matters

Make a hole in the center. The vent lets steam escape while the pie bakes, so the pastry does not swell or burst and the filling cooks evenly.

Swap the currant

How well each one fits the dish's main ingredients (apple, raisin, sugar, fig, ginger, lemon):

  1. Orangefits better
  2. Pearfits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against apple, raisin, sugar, fig, ginger, lemon. Candidates are from the same food group and used in at least 100 recipes.
