Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Provides the savoury core of the stew, becoming tender as it simmers slowly in liquid.
Potatoes
Break down during simmering to thicken the broth and give the stew body.
Flour
Coats the meat and thickens the cooking liquid into a richer, smoother sauce.

The step that matters

Ensure there is just enough water to cover the food. Too little liquid lets the food scorch on the pot base, while too much dilutes the flavour and thins the stew. Covering the food keeps heat even as it simmers.

Swap the potato

How well each one fits the dish's main ingredients (meat, flour, pepper):

  1. Shallotfits better
  2. Capsicumfits better
  3. Okrafits better
  4. Potatothe original

Fit is the average pairing score against meat, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
