Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Ingredients
Directions
Make the soup
Combine split peas, spring water, onions, celery, sweet herbs, carrots, dried mint, spinach, and bacon in a large pot.
Boil until vegetables are soft and tender.
Strain the soup through a fine sieve, pressing the carrot pulp through the sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Split peas
- Break down during boiling to thicken the soup and give it body.
- Onions
- Build the flavour base and add sweetness as they soften in the broth.
- Bacon
- Adds savoury, smoky fat that enriches the broth.
- Carrots
- Add natural sweetness and body when their pulp is pressed through the sieve.
The step that matters
Straining the soup through a fine sieve. Pressing the cooked vegetables and peas through the sieve breaks them into fine particles that thicken the soup and give a smooth texture. Skipping or rushing this leaves the soup thin and grainy.
Swap the onion
How well each one fits the dish's main ingredients (peas, celery, carrot, mint, spinach, pepper):
- Lettucefits better
- Turnipfits better
- Parsnipfits better
- Onionthe original
Fit is the average pairing score against peas, celery, carrot, mint, spinach, pepper. Candidates are from the same food group and used in at least 100 recipes.
