Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten whites folded in add air, making the batter light and airy when fried.
Flour
Thickens the mixture so it coats the orange slices rather than running off.
Egg yolks
Add richness and help bind the batter together.
Orange
Provides the main flavor and juicy centre inside the crisp coating.

The step that matters

Frying in hot butter until golden brown. If the butter is not hot enough, the batter absorbs fat and turns greasy instead of crisping. If it is too hot, the outside browns before the batter cooks through.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour, butter):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against egg, sugar, lemon, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
