Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Boil the Indian meal in 2 cups of the milk.

  2. In a large bowl, combine the boiled meal with the remaining milk, flour, ginger, cinnamon, lemon peel, salt, molasses, raisins, and suet.

  3. Beat the eggs and mix them into the batter.

Bake

  1. Pour the mixture into a baking dish and bake at 300°F (150°C) for 3 hours.

What each ingredient does

Indian meal
Cornmeal thickens the milk into a firm, pudding-like body as it cooks.
Eggs
Eggs bind the batter and help it set into a sliceable custard during baking.
Molasses
Molasses adds sweetness, dark colour and a deep, caramel-like flavour.
Suet
Suet adds fat that keeps the pudding moist and rich as it bakes.
Milk
Milk provides the liquid that the cornmeal swells in and forms the pudding's base.
Flour
Flour adds extra starch that helps the pudding hold its structure.

The step that matters

Bake low and slow. Cornmeal and egg need gentle, long heat to thicken and set without curdling or drying out. A higher oven temperature risks a tough, grainy texture and a cracked surface.

Swap the lemon

How well each one fits the dish's main ingredients (milk, flour, ginger, cinnamon, egg, molasses, raisin):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, flour, ginger, cinnamon, egg, molasses, raisin. Candidates are from the same food group and used in at least 100 recipes.
