What each ingredient does

Small cucumbers
Form the main body of the pickles, becoming crisp and tangy as they cure in vinegar.
Coarse sea salt
Draws water out of the cucumbers and seasons them during the initial soak.
Pulverized alum
Helps the cucumbers stay firm and crisp during pickling.

The step that matters

Scald the cucumbers in the vinegar. Heating the cucumbers briefly in vinegar must be controlled so they soften only slightly. Overheating breaks down cell walls and leaves them limp, while the vinegar's acidity preserves the pickles.
