What each ingredient does

Cucumbers
Provide the crisp, firm body that holds up through brining and pickling.
Cauliflower
Adds firm texture and bulk that absorbs the brine and vinegar flavour.
Onions
Contribute sweetness and aroma that mellow during the long pickling process.
Black and white mustard seeds
Add sharp, pungent flavour that develops as the seeds soften in vinegar.
Cider vinegar
Provides the acidity that preserves the vegetables and gives the pickle its tang.
Green tomatoes
Add tartness and firm body that holds shape in the pickling liquid.

The step that matters

Draining before adding the vinegar. Brining and draining remove excess water from the vegetables. Without thorough draining, the extra water dilutes the vinegar, weakening preservation and leaving the pickle soft and watery.
