The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and body to the syrup that balances the wine.
Sherry
Provides the main flavour and aroma, and most of the liquid.
Lemon juice
Adds acidity that brightens the wine flavour and balances the sugar.

The step that matters

Dissolve the gelatine fully. Gelatine must be completely dissolved in the boiling water before it is combined with the syrup. Any undissolved granules will not set and can leave the jelly grainy or cloudy in patches.

Swap the lemon

How well each one fits the dish's main ingredients (sherry, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Pineapplefits better
  4. Lemonthe original

Fit is the average pairing score against sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
